As the weather gets colder, I love to make my home cozy and fill it with comforting scents. One way to do this, is to make these vegan spiced dark chocolate madeleines. They are such a delicious chocolate treat with a hint of cinnamon and cardamom! Everything I need today ♡
The Recipe
Vegan spiced dark chocolate madeleines (yield 18 madeleines)
Ingredients
For the madeleine cakes:
3/4 cups / 100 g all-purpose flour
1/4 cup / 60 g sugar (or to taste)
1/4 cup / 20 g dark chocolate baking powder
1/2 tablespoon baking powder
1/4 cup / 60 ml vegetable oil (such as sunflower oil or canola oil)
3/4 cups / 175 ml plant-based milk (I used oat milk)
1/2 cup / 25 g dark chocolate, melted
1/3 cup / 30 g almond flour
1/2 teaspoon cinnamon powder
1/4 teaspoon cardamom powder
For the spiced dark chocolate:
5.3 ounces / 150 g good quality dark chocolate, melted
1 teaspoon cinnamon
dash of cardamom
Instructions
1. Preheat oven to 350 °F/ 180°C.
2. In a bowl combine all ingredients for the chocolate madeleines and mix on high speed until smooth.
3. Transfer the dough (use a spoon or a piping bag) into the molds of a madeleine cake pan and bake for about 20 minutes. Test with a wooden stick. It should come out clean.
4. Allow the madeleines to cool down before removing from the pan.
5. In a bowl combine melted dark chocolate and spices. Dip each madeleine into the spiced dark chocolate and put on a wire rack until chocolate is firm. ENJOY!
