Pasta and a creamy sauce is always a hit in our family, so I thought I share this easy and delicious recipe for vegan soy tenders in a creamy spinach and dried tomato sauce with you. It's really easy and only takes under 30 minutes to make it! Hope you love!
Vegan soy tenders in a creamy spinach and dried tomato sauce
Ingredients
1 medium yellow onion, finely chopped
3 garlic cloves, minced
1 tablespoon olive oil (or more as needed)
8 ounces / 220 g soy tenders
7 ounces / 200 g fresh spinach, chopped
8 dried tomatoes, in olive oil, sliced
1/4 cup / 60 ml white wine, I used Riesling
1 1/2 cups / 375 ml full fat oat milk
1/4 cup / 35 g vegan parmesan style cheese, grated
salt and pepper to taste
Instructions
1. In a large pan heat olive oil and cook onions and garlic until aromatic. Add soy tenders and cook on medium to high heat for about 10 minutes.
2. Add chopped spinach, dried tomatoes and white wine. Let simmer for a few minutes. Then add oat milk and vegan parmesan style cheese. Let simmer for about 10 minutes. Season with salt and pepper. Serve with pasta or rice. ENJOY!
