Vegan Cranberry and Macadamia Christmas Cookies

Our Holiday tins are finally filled with delicious cookies. One of our most favorite cookies are these vegan cranberry and macadamia cookies. Imagine soft and buttery shortbread cookie loaded with sweet and fruity cranberry jam. Dusted with powdered sugar. Really good and hard to resist!








The Recipe

Vegan Cranberry and Macadamia Christmas Cookies


Ingredients

500 g all-purpose flour

250 g cold vegan butter for baking, cut into small cubes

pulp of 1/2 vanilla bean

160 g powdered sugar

2 tablespoons vegan sour cream

120 g raw macadamia nuts, chopped very finely


Cranberry jam (I used homemade)

powdered sugar to dust the cookies


Instructions

1. In a bowl mix all ingredients for the cookie dough and knead by hand until smooth. Put into fridge for at least one hour.

2. Preheat oven to 350°C / 180 °C.

3. On a piece of parchment paper or a lightly floured surface roll out cookie dough and cut out round cookies. Transfer them on a lined baking tray and bake for about 10-12 minutes.

4. Allow to cool. Spread the cranberry jam on half of the cookies and top with another one (like a sandwich cookie).

5. Dust with powdered sugar and store in an airtight container. ENJOY!








Death by Vegan Monster Chocolate Cakes

Boo! These vegan monster chocolate cakes are such a delicious and fun treat for Halloween! And even if we can't go trick-or-treating this year, we will have lots of fun walking by all the scary and funny decorated houses in our neighborhood and enjoying some special treats at home!






The Recipe

Death by vegan monster chocolate cakes

Ingredients

For the cakes:

1 cup / 150 g all-purpose flour

2/3 cup / 75 g sugar

3/8 cups / 30 g dark baking cocoa powder

2 teaspoons baking powder

1/3 cup + 1 tablespoon / 90 ml vegetable oil, such as sunflower oil

1 cup +1 tablespoon / 265 ml plant-based milk, such as oat, almond or soy milk

1/2 cup + 1 teaspoon / 55 g almond flour

1/2 cup / 75 g vegan chocolate chips

For the frosting:

100 g / 3.5 ounces vegan dark chocolate

150 g / 5.3 ounces vegan butter for baking (sticks), softened a little

100 g / 7/8 cups powdered sugar

30 g / 1 oz dark cocoa baking powder

1 tablespoon vegan cream (I used soy cream)

Instructions

1. Preheat oven to 350 °F / 180 °C.

2. In a bowl combine flour, sugar, cocoa powder, baking powder and almond meal. Add vegetable oil, plant-based milk and chocolate chips and mix with a high-speed mixer until smooth. 

3. Pour cake batter into the molds of mini cake pans with high edges (I used 5 inch cake pans) and bake for about 25 minutes. Allow to cool before removing from the pan. 

4. For the frosting mix all ingredients with a high-speed mixer until smooth. Spread frosting over the cakes. Put into fridge for at least 2 hours. Decorate with fondant to give them a scary monster look. Enjoy!





Vegan Apple Puff Pastry Cake with Cinnamon

Since school started for my kids I rarely find time to make cake. This vegan apple puff pastry cake with cinnamon is really easy and quickly prepared. Perfect when the cravings hit and there is no time! Hope you enjoy a wonderful weekend!




The Recipe

Vegan apple puff pastry cake with cinnamon

Ingredients

about 400 g / 14 ounces vegan puff pastry sheets

3-4 apples, peeled and stem removed

1/2 cup / 120 ml apple cider (sub in apple juice)

1/4 cup / 40 g sugar

1-2 tablespoons corn starch

cinnamon and sugar to sprinkle 

Instructions

1. Preheat oven to 350 °F / 180 °C.

2. In a pot heat apple cider and sugar. Sift in cornstarch and let thicken. Allow to cool a little. Slice apples and mix with applesauce.

3. Transfer puff pastry to a tart pan (about 11 inches / 28 cm). Cut off edges. Pour apples over the puff pastry and bake for about 30 minutes or until golden brown. Sprinkle with cinnamon and sugar and serve with vegan whipped cream, if desired. Slice and ENJOY!
