Vegan Pesto Rolls

We still have lots of basil growing in the backyard. So I get to make delicious pesto all the time! Yum. These fluffy vegan pesto rolls are one simple way to embrace those garden herbs. Perfect as dinner rolls or a snack. Hope you enjoy!







The Recipe

Vegan pesto rolls

Ingredients

300 g bread flour (sub in all-purpose flour)

1/2 teaspoon active dry yeast

200 ml luke warm water (or as needed)

1/2 teaspoon salt

olive oil as needed

100 g / 1/2 cup vegan pesto

vegan mozzarella cheese

roasted pine nuts

Instructions

1. In a bowl combine flour, yeast, water and salt. Knead for a few minutes until smooth. Place dough into a bowl and drizzle generously with olive oil. Allow to rise for at least 2 hours at room temperature.

2. Preheat oven to 470 °F / 245 °C.

3. On a lightly floured work surface roll out dough into a rectangle about 1/4 inch / 0.6 cm thick. Use a knife to spread the vegan pesto across the dough. 

4. Gently roll it up, starting from the long edge closest to you. Slice into rolls. Place rolls into a round baking pan and let rise for another 30 minutes. Top with vegan mozzarella cheese.

5. Bake for about 20-30 minutes, until golden brown. Top with roasted pine nuts. ENJOY!
