Vegan lime and coconut pie. Super easy to make, delicious, creamy and made with plenty of fresh lime juice. One of these go-to summer desserts I could eat all the time.

Vegan lime and coconut pie
Ingredients
For the crust:
2 3/8 cups / 300 g all-purpose flour
6 tablespoons vegan butter
6 tablespoons vegetable shortening
2 teaspoons sugar
5-6 teaspoons ice cold water
For the filling:
2 cans (22.6 ounces / 640 g) condensed coconut milk
1/2 cup / 120 g vegan sour cream
1/2 cup / 120 ml lime juice
zest of 1 lime
Instructions
1. In a bowl combine flour, vegan butter, vegetable shortening, sugar and ice cold water. Knead until smooth. Put into fridge for at least 1 hour.
2. Preheat oven to 350 °F / 180 °C.
3. On a lightly floured surface roll out dough. Transfer to a 9-inch cake form and trim edges. Bake for 15 minutes.
4. Meanwhile prepare the filling. Combine condensed coconut milk, vegan sour cream and lime juice and zest. Mix until smooth.
5. Pour filling into pie crust and bake for about 15 minutes. Allow to cool, then refrigerate for at least 2 hours. Serve with whipped coconut cream, if desired. Slice and ENJOY!
