Vegan Baked Lime Cilantro Tofu

The Recipe

Vegan baked lime cilantro tofu

Ingredients

3 tablespoons vegetable oil, such as canola or sunflower oil

juice of 2 limes 

1/4 cup fresh cilantro leaves, chopped

1 teaspoon chili flakes

4 garlic cloves, minced

2 teaspoons brown sugar

1/2 teaspoon cumin

salt and pepper to taste

16 ounces / 454 g super firm tofu

cornstarch as needed

fresh cilantro to garnish

Instructions

1. Preheat oven to 450 °F / 230 °C.

2. Cut tofu into squares. In a bowl combine oil, lime juice, chopped cilantro, chili flakes, minced garlic, sugar, cumin, salt and pepper. Dip tofu into cornstarch and cover it completely. Then dip into lime mixture. Repeat with remaining tofu. Place tofu on a lined baking tray. Add remaining lime mixture over the tofu. 

3. Bake for about 20 minutes or until golden brown. Flip tofu after 10 minutes. Garnish with fresh cilantro and lime wedges. Serve with steamed rice and veggies, if desired. ENJOY!
