I think I will never get tired of eating banana cake! So here's another one for you: Vegan banana zebra cake with an orange glaze. Super quick to mix up, pantry staple ingredients and SO DELICIOUS!
The Recipe
Vegan banana zebra cake with an orange glaze
Ingredients
Light batter:
2 over-ripe bananas, mashed
2/3 cup / 75 g sugar
1 1/2 cups / 190 g all-purpose flour
4.5 ounces / 125 g soft vegan butter at room temperature
1 teaspoon baking powder
2/3 cups / 150 ml plant-based milk (I used oat milk)
Dark batter:
1/4 cup / 60 ml plant-based milk (I used oat milk)
1/ cup / 30 g dark cocoa powder
For the glaze:
1/2 cup / 65 g powdered sugar
1-2 tablespoons orange juice
Instructions
1. Preheat oven to 350 °F / 180 °C.
2. In a bowl combine mashed bananas, flour, sugar, baking powder, plant-based milk and vegan butter. Mix until smooth.
3. Transfer half of the batter to a second bowl and add dark baking cocoa powder and plant-based milk. Mix until smooth.
4. Pour the light and dark cake batter alternating into a cake pan (I used a 6 inch / 15 cm tube cake pan) using a tablespoon.
5. Bake for about 50-60 minutes until wooden stick comes out clear.
6. For the glaze mix icing sugar and orange juice and decorate cake with it. Slice and ENJOY!
