I know it's hot outside....BUT turn your oven on and make this delicious vegan banana bread with cookie dough. Simple to make, but SO GOOD! Not your average banana bread, because it's filled with yummy cookie dough and chocolate chunks. Every bite is insanely delicious!
Vegan chocolate chunk banana bread with cookie dough
Ingredients
For the banana bread:
2 over-ripe bananas, mashed
300 g all-purpose flour
100 g sugar
3 teaspoons baking powder
2/3 cup plant-based milk (I used full-fat oat milk)
180 g vegan butter, at room temperature
100 g vegan chocolate chunks
For the cookie dough:
1/4 cup / 60 g cashew butter
1/3 cup / 70 g sugar
1/2 cup / 75 g all-purpose flour
2 tablespoons vegan butter
pinch of salt
1/3 cup / 55 g vegan chocolate chips
Instructions
1. Preheat oven to 350 °F / 180 °C.
2. In a bowl combine cashew butter, sugar, all-purpose flour, vegan butter, chocolate chips and a pinch of salt. Knead by hand until smooth. Form 12 cookie balls (about the size of a walnut). Put into fridge.
3. In a bowl combine mashed bananas, all-purpose flour, sugar, baking powder, oat milk and vegan butter. Mix with a high speed mixer until smooth. Add chocolate chunks and mix with a spoon.
4. Pout half of the banana bread batter into a cake pan. Then add 6 cookie balls on top. Add remaining banana bread batter and add remaining 6 cookie balls on top. Bake for about 1 hour, until golden brown. Allow to cool. Slice and ENJOY!
