The Recipe
Vegan Thai quesadillas (makes about 4 to 5)
Ingrediens
12 ounces / 340 g plant-based ground
1 tablespoon vegetable oil
1 teaspoon ginger, minced
1 garlic clove, minced
1 tablespoon red curry paste
soy sauce to taste
2 tablespoons coriander, chopped (optional)
round vegan spring roll wrappers
vegetable oil for cooking
Instructions
1. Heat 1 tablespoon of oil in a pan. Add ginger, garlic, red curry paste and plant-based ground and stir-fry for about 10 minutes. Season with soy sauce and mix with chopped coriander.
2. On a flat working surface place one sheet of spring roll wrappers and top with the plant-based ground. Add another sheet of spring roll wrappers on top. Repeat with the remaining filling.
3. In a pan heat some vegetable oil and fry the "Quesadillas" on both sides until golden brown. Serve with sweet and hot sauce, fresh cucumbers, pineapples and onions or whatever you desire. ENJOY!
