Vegan marble sandwich cookies. Such a good treat for our afternoon tea today. They are filled with vegan chocolate and hazelnut butter, but feel free to sub in any other nut butter you like. Hope you try these!
The Recipe
Vegan marble sandwich cookies (makes about 25 sandwich cookies)
Ingredients
For the light cookies:
1 cup / 125 g all-purpose flour
1/2 cup / 50 g powdered sugar
2.8 ounces / 80 g vegan butter (for baking)
For the dark cookies:
1 cup / 125 g all-purpose flour
1/2 cup / 50 g powdered sugar
2.8 ounces/ 80 g vegan butter
3 tablespoons dark cocoa powder
1 tablespoon plant-based milk
For the filling:
1 cup / 200 g vegan chocolate hazelnut butter
Instructions
1. In a bowl combine flour, powdered sugar and vegan butter. Knead by hand until smooth. Put into fridge for about 1 hour.
2. In another bowl combine flour, powdered sugar, vegan butter, cocoa powder and plant-based milk. Knead by hand until smooth and put into fridge for about 1 hour.
3. Preheat oven to 350 °F / 180 °C.
4. Roll out pastry on a lightly floured work surface. Make cookies using a round cookie cutter and bake for about 12-15 minutes or until edges are starting to get golden brown.
5. Allow to cool on a wire rack. Spoon about 1 teaspoon chocolate hazelnut butter on a light cookie and top with a dark cookie. Repeat with the remaining cookies. ENJOY!
