Vegan lentil and seitan "meatballs" in marinara sauce
Ingredients
For the "meatballs":
3.5 ounces / 100 g lentils, cooked
4 ounces / 110 g seitan
1 shallot, finely chopped
1 garlic clove, minced
1 teaspoon paprika powder
1 teaspoon dried herbs
1/4 teaspoon onion powder
1/2 teaspoon salt
dash of pepper
2 tablespoons flaxseed meal
3 tablespoons water
1 tablespoons tomato paste
1/4 cup / 35 g bread crumbs
For the marinara sauce:
1 tablespoon olive oil
2 garlic cloves, minced
28 ounces / 790 g peeled tomatoes
2 tablespoons chopped basil
Instructions
1. In a food processor combine all ingredients for the "meatballs" and blend until smooth. Let sit for a bit.
2. In a pot heat 1 tablespoon olive oil and cook garlic until aromatic. Add tomatoes and basil and blend with a blender. Let simmer for about 20-30 minutes until sauce has thickened.
3. In a pan heat some olive oil. Take the lentil-seitan mixture and form balls. Fry on both sides until crispy and golden brown. Serve "meatballs" with marinara sauce and some bread or pasta, if desired. ENJOY!
