Vegan Avocado and Pumpkin Seed Cake

Sharing a new recipe for this vegan avocado and pumpkin seed cake. It's moist and delicious and so easy to make in one bowl. Avocado and pumpkin seeds add so much extra flavor. Hope you give it a try!




The Recipe

Vegan avocado and pumpkin seed cake

Ingredients

2 1/2 cups / 310 g all-purpose flour

1/2 cup / 55 g almond flour

1 cup / 200 g sugar

2 teaspoons baking powder

1 cup / 150 g pumpkin seeds

1 ripe avocado

1/4 cup / 60 ml vegetable oil (such as sunflower oil)

juice of 1 lime

125 g vegan yogurt (I used coconut yogurt)

1 cup / 250 ml plant-based milk

Instructions

1. Preheat oven to 350 °F / 180 °C.

2. In a food processor grind pumpkin seeds. Transfer them to a bowl. Add flour, almond flour, sugar, baking powder and combine. Then add oil, lime juice, mashed avocado, vegan yogurt and plant-based milk. Mix with a high speed mixer until smooth.

3. Transfer cake batter to a cake pan and bake for about 1 hour 15 minutes. 

4. Allow to cool before removing from the pan. Dust with powdered sugar and decorate with pumpkin seeds, if desired. Slice and ENJOY!
