Vegan Apricot Waffles

Vegan apricot waffles

Ingredients

1 2/3 cups / 220 g all-purpose flour

1 cup / 110 g almond flour

1.5 (about 3/4 cup) over-ripe bananas, mashed

3 tablespoons maple syrup

1/2 + 1/3 cups / 150 ml plant-based milk

3 tablespoons vegan butter, melted

3 teaspoons baking powder

about 1 cup / 3 small apricots, pitted and chopped

Instructions

1. In a bowl combine flour, almond flour and baking powder. Add mashed banana, syrup, milk and butter and mi until smooth. Add chopped apricots and mix carefully.

2. Heat a waffle iron and make the waffles. Serve with powdered sugar, if desired. ENJOY!
