Vegan rhubarb scones with orange butter
Ingredients
For the scones:
225 g all-purpose flour
60 g sugar
1.5 teaspoon baking powder
60 g cold butter
110 g plant-based yogurt
100 g rhubarb
For the butter:
100 g vegan butter
1 teaspoon orange zest
1 teaspoon vanilla sugar
Instructions
1. Preheat oven to 410 °F / 210 °C.
2. In a bowl combine flour, sugar, baking powder and cold butter until crumbles form. Add the yogurt and knead until smooth. Then add the chopped rhubarb and knead again.
3. Roll out the dough until about 1.5 inches / 4 cm thick. Cut into 8 pieces and bake for about 30-35 minutes.
4. Meanwhile combine butter, orange zest and vanilla sugar and knead/mix until smooth. Store in fridge.
5. Enjoy scones with orange butter.
