Vegan Green Sauce with Wrinkled Salt Potatoes

Spanish wrinkled potatoes (Papas Arrugadas) with vegan green sauce. I love these kind of potatoes so much! Reminds me of our summer vacations in Spain where they offer these small salt crusted potatoes everywhere. Traditionally they are served with "Mojo", a spicy sauce made of herbs, garlic, spices and peppers. 







The Recipe

Vegan green sauce with salt potatoes

Ingredients

For the potatoes:

24 oz / 680 g small potatoes

4 tablespoons coarse sea salt

2 bay leaves

2 garlic cloves

For the green sauce:

4 cups / 100g mixed fresh herbs and greens (I used kale, basil, parsley, dill and oregano)

2 garlic cloves

1/2 cup / 120 ml olive oil

2 pieces of bread (I used homemade sourdough bread)

salt and pepper to taste

Instructions

1. Wash potatoes and transfer them to a pot. Add water so that they are almost covered (not more because you want them to be covered in salt later). Add salt, garlic and bay leaves. Bring to boil, then let simmer for about 20 minutes (place a lid on the pot). 

2. Meanwhile make the sauce. Add greens, herbs, garlic, olive oil and bread to a food processor. Mix until smooth. Season with salt and pepper. Sometimes I also add a little bit of vegan yogurt, too. So yummy!

3. Serve potatoes with green sauce and a salad if you desire. ENJOY!
