Vegan Korean Kimchi Pancakes

Have you ever tried Chinese Green Onion Pancakes? They are crispy yet doughy, a little salty and usually made with fragrant green onions. Because I'm a sucker for kimchi I made them a little different. And they turned out so so good! They are really easy to make and you only need a few ingredients.















The Recipe

Vegan Korean Kimchi Pancakes

Ingredients

1 1/2 cups / 200 g all-purpose flour

1 teaspoon salt

1/2 cup / 125 ml water

1/3 cup kimchi, chopped

2 tablespoons vegetable oil

some additional all-purpose flour for dusting and rolling

oil for frying

Instructions

1. In a bowl combine flour and salt. Bring water to boil and add slowly to the bowl with flour. Knead the dough until smooth. Cover the dough with a damp cloth and let it rest for 30 minutes. Add the kimchi to the dough and combine well.

2. Divide dough into 8 equal pieces. Roll each dough into a ball. On a floured surface roll the dough to a thin disc using a rolling pin. Brush the surface with oil. Roll the dough into a cylinder. Coil it up like a snail and roll again, using a floured rolling pin. Repeat with the rest of the dough.

3. Add a little oil into a pan over high heat. Transfer a pancake into the pan and fry each side until golden brown, about 1 minute. Add more oil and repeat with other pancakes. ENJOY!
