Vegan Rhubarb Almond Friands
Ingredients
For the friands:
1 1/5 cups / 150 g all-purpose flour
1 cup / 120 g almond flour
1 1/2 cups / 200 g powdered sugar
1 teaspoon orange zest
2 tablespoons baking powder
3.5 ounces / 100 g apple sauce
5.3 ounces / 150 g vegan butter
1 stalk of rhubarb, chopped
For the glaze:
1 cup + 3 tablespoons / 150 g icing sugar
1/2 teaspoon beetroot powder
1-2 teaspoons water, as needed
Instructions
1. Preheat oven to 350 °F / 180 °C.
2. In a bowl combine flour, almond flour, powdered sugar, orange zest and baking powder. Add apple sauce and vegan butter and mix until smooth. Fill into friand cake molds (or use small muffin forms) and add a few chopped rhubarb pieces on top. Bake for about 20-25 minutes until edges are lightly golden brown.
3. In a bowl mix icing sugar, beetroot powder and water. Glaze your cakes. Decorate with cooked rhubarb, if desired. ENJOY!
