Vegan Feta and Sun-Dried Tomato Dip

The Recipe

Vegan feta and sun-dried tomato dip

Ingredients

4 ounces / 115 g vegan feta cheese

4 ounces / 115 g sun dried tomatoes in oil

1 tablespoon tomato paste

1 small garlic clove (optional)

1/2 teaspoon chopped fresh rosemary (sub in other herbs as basil, oregano or thyme or use dried herbs)

salt to taste

Instructions

1. In a food processor combine feta, sun dried-tomatoes, tomato paste, rosemary and garlic and blend until smooth. If it is too thick, use more olive oil. Season with salt. Serve with grilled veggies, olives, pickles, bread and whatever you desire. ENJOY!
