Vegan baked cauliflower satay
Ingredients
1 head of cauliflower
2 teaspoons turmeric
1/4 cup / 60 ml coconut cream
1 tablespoon maple syrup
2 tablespoons soy sauce
2 tablespoons curry powder
1 teaspoon salt
2 tablespoon vegetable oil
For the peanut dip:
1/2 / 110 ml cup coconut milk
1 tablespoon maple syrup
1 tablespoon curry powder
1 tablespoon peanut butter
1 tablespoon ginger juice
soy sauce to taste
Instructions
1. Preheat oven to 410 °F / 210 °C.
2. For the dip combine coconut milk, syrup, curry powder, peanut butter, ginger juice and soy sauce and mix well. Set aside.
3. In a bowl combine turmeric, coconut cream, syrup, soy sauce, curry powder, salt and vegetable oil and mix. Wash the cauliflower and put the cauliflower florets into the bowl and marinate the cauliflower florets. Put them on sticks. Bake for about 30 minutes. After 20 minutes baking time drizzle the cauliflower with a little bit of the peanut dip.
3. Serve baked cauliflower satay with peanut dip and steamed rice, if desired. ENJOY!
