The Recipe

Vegan avocado madeleines with white chocolate

Ingredients

1 cup / 125 g all-purpose flour

1/2 cup / 100 g sugar

1 teaspoon baking powder

1/2 cup / 60 g almond flour

40 ml vegetable oil

80 ml plant-based milk (I used oat milk)

zest of 1 lime

125 g plant-based yogurt (I used coconut yogurt)

1 tablespoon pumpkin seed butter (optional)

1/2 ripe avocado, mashed

Instructions

1. Preheat oven to 350 °F / 180 °F.

2. In a bowl combine flour, sugar, baking powder, almond meal, oil, plant-based milk, zest of lime, yogurt, pumpkin seed butter and mashed avocado. Mix with a high-speed mixer until smooth.

3. Using a piping bag pour batter into the molds of a madeleine baking pan. Bake for about 15-20 minutes or until wooden stick comes out clear. Let cool on a wire rack.

4. Decorate with vegan white chocolate if desired (I colored mine with some natural green superfood powder). ENJOY!
