Vegan Coconut Sticky Rice with Pineapples and Cashews

Vegan coconut sticky rice with pineapples and cashews. This basically screams summertime and I honestly could eat this almost every day! One of my favorite rice dishes to serve with asian food. Hope you enjoy!








The Recipe

Vegan pineapple and cashew sticky rice (serves 2 as a main dish or 3 - 4 as a side dish)

Ingredients

2 cups / 360 g sticky (glutinous) rice, soaked overnight in water

3/4 teaspoon salt

1 teaspoon sugar

1/2 cup / 80 g cashews, roasted


1 cup / 220 g pineapple, chopped

1/2 cup / 120 ml coconut milk

2 spring onions, chopped

Instructions

1. Soak the rice overnight in water. The next day drain the rice and rinse under cold water. 

2. Combine rice, salt, sugar and cashews and mix with a spoon. Cover the rice with a kitchen towel or cheesecloth and put the rice in a steamer. Steam for about 30 minutes or until rice is tender.

3. Meanwhile chop pineapple and spring onions. Combine cooked rice with coconut milk, chopped pineapples and spring onions and serve immediately. ENJOY!
