The Recipe
Vegan chickpea pizza (makes 2 medium sized pizza)
Ingredients
For the dough:
2 cups/ 250 g all-purpose flour
1 1/2 cups + 2 tablespoons / 150 g chickpea flour
1 cup / 250 ml luke warm water
3 tablespoons olive oil
1 teaspoon active-dry yeast
1 - 1.5 teaspoons salt
For the topping:
tomato sauce
vegan mozzarella cheese
chickpeas
yellow cocktail tomatoes
red onion slices
fresh herbs, such as basil, oregano, parsley
Instructions
1. In a bowl combine flour, chickpea flour, water, salt, yeast and oil and knead until smooth. Let rise for about 2 hours or until dough has doubles in size.
2. Preheat oven to 450 °F / 230 °C.
3. Divide the dough into 2 equal pieces and transfer to a lightly floured working surface. Roll out each dough. Top with tomato sauce, chickpeas, vegan mozzarella, herbs, sliced onions and tomatoes. Bake for about 20 minutes or until golden brown. Slice and ENJOY!
