Vegan Blueberry Oat Bread

The Recipe

Vegan blueberry oat bread

Ingredients

7 ounces / 200 g blueberries

7 ounces / 200 g vegan yogurt (I used coconut yogurt)

1/3 cup / 80 ml vegetable oil, such as sunflower oil

1/4 cup / 60 ml maple syrup

1 teaspoon baking powder

7 ounces / 200 g oat flour

1 cup / 110 g all-purpose flour

zest of 1 small lemon

1 ripe banana, mashed

1/4 cup / 60 ml plant-based milk (I used oat milk)

Instructions

1. Preheat oven to 350 °F / 180 °C.

2. In a bowl combine flour, oat flour and baking powder. Add yogurt, oil, syrup, lemon zest, mashed banana and milk. Mix with a high-speed mixer until smooth. Carefully add blueberries and combine.

3. Pour dough into a lightly greased cake pan and bake for about 1 hour or until golden brown. Let cool on a wire rack. Slice and serve with vegan yogurt, maple syrup, blueberries and chopped almonds, if desired. ENJOY!
