Savory Bund Cake with Walnuts, Herbs and Vegan Bacon

This is an easy recipe for a savory bund cake packed with walnuts, herbs and vegan bacon. Perfect for the upcoming barbecue season, a dinner side dish or just to satisfy those snack cravings! 



The Recipe

Savory bundt cake with walnuts, herbs and vegan bacon

Ingredients

2 cups / 250 g all-purpose flour

1 teaspoon active-dry yeast

3.5 ounces / 100g vegan butter, melted

1/2 cup / 120 ml plant-based milk

1/2 teaspoon salt, dash of pepper and nutmeg

3 slices vegan bacon, chopped

1/2 cup / 50 g walnuts

1 teaspoon thyme leaves (sub in dried thyme)

Instructions

1. In a bowl combine flour, yeast, vegan butter, plant-based milk, salt and spices and knead by hand until smooth. Let rise for about 1 hour or until dough has doubled in size.

2. In a skillet roast bacon and walnuts. 

3. Add walnuts, bacon and thyme to the dough and knead gently until combined. Transfer to a lightly grease bundt cake pan and let rise for another 30 minutes.

4. Preheat oven to 350 °F / 180 °C. Bake for about 45 minutes or until golden brown. Slice and ENJOY!
