Vegan Walnut Shortbread Fingers

Well...because it had to be done. Presenting you my glass of hot coffee with frothy dalgona coffee. Tadaaaaa! So now let's talk about these healthy and refined sugar free walnut shortbread fingers.These delicious whole grain shortbread fingers taste great on their own as well as served in the company of any drink you like to enjoy. Best part: they are made in no time!










The Recipe 

Vegan walnut shortbread fingers (makes about 8 fingers)

Ingredients

1 1/2 cups / 180 g whole wheat pastry flour (or spelt flour)

1/2 cup / 60 g walnuts

1/4 cup / 60 ml maple syrup

1/4 cup / 60 ml coconut oil (sub in vegan butter)

dash of salt

Instructions

1. Preheat oven to 325 °F / 170 °C.

2. Add walnuts to a food processor and process until finely ground.

3. In a bowl combine ground walnuts, flour, maple syrup, salt and coconut oil. Knead by hand until smooth. Transfer to a piece of parchment paper and roll out to a rectangular form of 8 x 4-inches (20 x 10 cm). Cut into 8 equal pieces and prick the tops with a fork. Arrange on the baking tray so that they're at least 1 inch (2.5 cm) apart.

4. Bake for about 20 minutes or until light golden brown. Transfer to a wire rack to cool. ENJOY!

In case you still need the recipe for the whipped coffee: Whisk 2 tablespoons of instant coffee powder with 2 tablespoons sugar and 2 tablespoons hot water until fluffy. Top your favorite milk with it.
