Vegan Rainbow Yogurt Popsicles

Embracing all the beautiful and nourishing fruits today with these homemade rainbow yogurt granola popsicles. They are vegan, refined sugar free, quickly prepared and loved by all ages! Just keep them in the freezer and take one when you crave a healthy treat.








The Recipe

Vegan Rainbow Yogurt Popsicles (makes 4 mini popsicles)

Ingredients

1 cup / 5.3 oz / 150 g coconut yogurt (sub in other plant-based yogurt)

1 tablespoon agave syrup (or maple syrup)

1/4 cup / 35 g fruits (I used mango for the yellow popsicles, strawberries and raspberries for the red popsicles and blueberries for the purple popsicles)

4 tablespoons of your favorite granola (I used refined sugar free beetroot granola)

Instructions

1. Divide the granola into the popsicle molds.

2. In a food processor combine yogurt, fruits and syrup. Mix until smooth. To enhance color you can use natural fruit powder. Pour into the popsicle molds and freeze for about 4 hours or until firm. ENJOY!
