The Recipe
Vegan Sourdough cheese and herb grissini
Ingredients
2 cups / 250 g all-purpose flour
1 teaspoon salt
75 g active bubbly starter (sub in 1 teaspoon active-dry yeast)
3 1/2 tablespoons sugar
3 tablespoons olive oil
3 teaspoons fresh thyme leaves
1/4 cup / 35 g vegan parmesan cheese, grated
1/2 cup / 110 ml warm water
(4 tablespoons olive oil to brush the sticks)
Instructions
1. In a bowl combine all ingredients for the dough and knead by hand until smooth. If using a sourdough starter, let rise for about 4-5 hours. If using yeast, let rise about 1,5 hours.
2. On a floured working surface divide dough into 4 equal pieces. Cut each piece into 8 pieces and roll sticks about 8-10 inches / 20-25 cm long. Place on a baking tray and brush with olive oil.
3. Preheat oven to 450 °F / 230°C.
4. Bake for about 12-15 minutes or until golden brown. Baking time my vary, depending on your oven. ENJOY!
