So once in a while my kids ask for a hot dog. And of course I make them some. With carrots and quinoa. Haha! And you know what? They might pick out the Swiss chard, but they enjoy the rest!
The Recipe
Vegan Hot Dogs
Ingredients
6 Hot Dog buns
6 carrots, washed
1 bunch of rainbow chard, chopped (sub in spinach or kale)
1 teaspoon olive oil
1/2 cup / 110 ml vegetable broth
1/2 cup / 100 g quinoa
1/2 cup / 100 g green lentils
2 cups / 470 ml vegetable broth
Instructions
1. In a pan combine 2 cups vegetable broth, quinoa and lentils. Bring to boil, then let simmer on low heat until tender.
2. In a pan bring water to boil. Cook carrots for about 5 minutes until lightly tender.
3. In a pan heat 1 teaspoon of olive oil and cook Swiss chard for a few minutes on medium heat. Add vegetable broth and cook for about 10 minutes. Add cooked quinoa and lentils and cook until lightly crispy. Season with salt and pepper if desired.
4. Add carrots and quinoa-mix to the hot dog buns. Serve with ketchup or mustard. ENJOY!
