Vegan Baked Blueberry Vanilla Mini Donuts

In love with these vegan baked blueberry vanilla donuts. They are moist, juicy, fluffy and the perfect small afternoon treat. This is one of my favorite go-to recipes, because it's just so good. Sub in other berries or make muffins. Close your eyes, take a bite and ENJOY!








The Recipe

Vegan baked blueberry vanilla mini donuts 

Ingredients

1 1/4 cups / 160 g all-purpose flour

1/4 cup / 25 g almond flour

3/4 cup / 170 g vegan butter

3/4 cup / 150 g sugar

1 1/2 teaspoons baking powder

5.3 ounces / 150 g unsweetened vanilla coconut yogurt

2 tablespoons oat milk (sub in other plant-based milk)

5 ounces / 150 g Maine blueberries (sub in wild blueberries)

For the glaze:


2 tablespoons water

10 tablespoons powdered sugar

blueberry powder

Instructions

1. Preheat oven to 350 °F.

2. In a bowl combine flour, almond flour, sugar and baking powder. Add butter, yogurt and milk and mix until smooth. Carefully add the blueberries and mix (do not overmix!).

3. Divide the batter among the molds of a lightly greased mini donut form. 

4. Bake for about 12-15 minutes. If you use a regular donut or muffin pan, bake for about 30 minutes. 

5. For the glaze combine water, blueberry powder (about 1/2 teaspoon or more if you desire a darker color) and powdered sugar. Glaze the donuts. ENJOY!
