Vegan Quinoa Kimchi Sushi

Sushi is one of my favorite dinners to make. It's so versatile. I let the kids help so they can pack their sushi with whatever they like and they are so proud in the end. One of my favorite sushi rolls is a combination of quinoa and spicy kimchi! So so good!






The Recipe

Vegan quinoa kimchi sushi (makes 2 rolls)

Ingredients

For the quinoa:

1 cup quinoa

2 cups water

4 tablespoons milled flaxseed meal

8 tablespoons water

salt to taste

For the filling:

Tofu, avocado and kimchi, sliced


2 nori sheets

Instructions

1. Bring 1 cup of quinoa and 2 cups water to boil. Reduce heat and let simmer for about 25 minutes, until water is absorbed.

2. Mix milled flaxseeds and water and allow to sit for a few minutes. Then mix with the quinoa.

3. On a flat surface make the sushi. First add the quinoa to the nori sheets until the sheets are fully covered. Add slices of avocado, tofu and kimchi. Roll tightly and cut into pieces. Enjoy with soy sauce, ginger and wasabi.
