Vegan hazelnut and berry bars
Ingredients
For the cake:
2/3 cup / 75 g all-purpose flour
2/3 cup / 75 g sugar
6/7 cups / 100 g hazelnut flour
1 tablespoon dark baking cocoa powder
3/4 teaspoon baking powder
1/4 cup / 60 g vegan butter
1/3 + 1/4 plant-based milk (I used oat milk)
1/4 cup / 45 g vegan mini semi-sweet chocolate chips
2/3 cup / 75 g sugar
6/7 cups / 100 g hazelnut flour

3/4 teaspoon baking powder
1/4 cup / 60 g vegan butter
1/3 + 1/4 plant-based milk (I used oat milk)
1/4 cup / 45 g vegan mini semi-sweet chocolate chips
13 ounces / 370 g mixed berries
1-2 tablespoons maple syrup
For the crumbles:
5/8 cups / 75 g hazelnut flour
2/3 cups / 75 g all-purpose flour
1/4 cup / 45 g sugar
2 tablespoons cocoa powder
1/3 cup / 30 g oats
1/3 cup / 75 g vegan butter
Instructions
1. Preheat oven to 350 °F.
2. In a bowl combine flour, sugar, hazelnut flour, cocoa powder, baking powder, vegan butter, plant-based milk and chocolate chips. Mix until combined.
3. Pour cake batter into an 8 x 8 inch (20x20 cm) rectangular baking pan. Mix the berries with the syrup and add on top of the cake.
4. In a bowl combine all ingredients for the crumbles and knead by hand until you can form crumbles. Add them on top of the berries.
5. Bake for about 50-60 minutes or until a wooden stick comes out clear. Allow to cool down. Cut into squares. Enjoy with your favorite ice cream or some vegan whipped cream! ENJOY!
