Vegan Baked Lentil Rice with Fried Onions and Lemon Turmeric Hummus

Vegan baked green Jade pearl rice, packed with lentils, pistachios and fried onions.
It's easy, quick, healthy, delicious and the perfect pantry staple recipe! Serve with roasted tomatoes and creamy vegan lemon turmeric hummus and you have a yummy and nourishing dinner. 









The Recipe

Vegan baked lentil rice with fried onions and lemon turmeric hummus

Ingredients

For the rice:

1 teaspoon vegetable oil

2 garlic cloves, grated

1/2 cup / 120 g French green lentils

1 1/2 cups / 370 g green Jade pearl rice

4 cups vegetable broth

1/2 teaspoon cinnamon powder

1/2 teaspoon coriander powder

1/2 teaspoon cumin powder



1 teaspoon vegetable oil

1 medium red onion


1/3 cup / 45 g pistachios

For the hummus:

1/2 cup / 110 g canned chickpeas

1 garlic clove

1 tablespoon tahini

2 tablespoons vegan sour cream

4 tablespoons lemon juice

1/2-1 teaspoon turmeric powder to taste

2 tablespoons coconut yogurt

salt to taste

Instructions

1. In a large pot heat 1 teaspoon of vegetable oil. Add garlic, spices, rice and lentils and cook for about 1-2 minutes (stirring frequently). Add vegetable broth. Bring to boil. Then reduce heat and let simmer for about 20 minutes or rice is done.

2. Preheat oven to 410 °F / 210 °C. 

3. Lightly grease an often safe bowl and add rice. Bake for about 20 minutes.

4. Meanwhile prepare the hummus. In a food processor add chickpeas, garlic, tahini, sour cream, coconut yogurt, lemon juice and turmeric and mix until smooth. Season with salt.

5. In a pan roast pistachios on medium heat until golden brown. Set aside. Heat 1 teaspoon vegetable oil. Slice onion and cook until crispy. 

6. Place rice on a plate. Top with roasted pistachios, fried onions and serve with lemon turmeric hummus. ENJOY!
