Vegan chocolate cardamom babka
Ingredients
For the dough:
5 cups / 630 g all purpose flour
1/2 cup / 100 g sugar
2 teaspoons active dry yeast
2/3 cup / 150 g vegan soft butter
10-11 tablespoons water / 160 g of water
For the filling:
1/2 cup / 40 g dark baking cocoa
7 tablespoons / 50 g powdered sugar
5.3 ounces / 150 g dark chocolate
2 tablespoons sugar
For the glaze:
3/4 cup / 150 g sugar
1/3 cup / 80 ml water
Instructions
1. In a large bowl combine all ingredients for the dough and knead by hand until smooth. Let rise for about 2 hours.
2. Preheat oven to 350 °F / 180 °C.
3. Prepare the filling. In a bowl combine all dry ingredients. Melt chocolate and butter and combine everything until smooth.
4. Roll out the dough so that you get a rectangular shape. Spread the filling over the dough. Fold up both sides to the center. Using a sharp knife cut into 4 pieces lengthwise. Braid two pieces together and bring everything together so that you get a wrap.
5. Bake for about 30 minutes.
6. Meanwhile prepare the glaze. In a pan heat sugar and water until sugar is completely dissolved. Drizzle over the baked babka. Let cool down. ENJOY!
