Vegan Mango Yogurt Tart

Delicious vegan mango yogurt tart topped with fresh fruits. So simple, quickly prepared and so so good! Happy Sunday and happy Easter to all of you out there! 










The Recipe

Vegan Mango Yogurt Tart

Ingredients

For the dough:

1/2 cup / 110 g vegan butter

1 3/4 cups / 225 g all-purpose flour

2/3 cup / 75 g powdered sugar

3 tablespoons plant-based milk

For the filling:

21 ounces / 600 g vegan mango yogurt

7 ounces / 200 g vegan cream cheese

4 tablespoons cornstarch

1/4 cup / 50 g sugar

Instructions

1. In a bowl combine all ingredients for the dough and knead by hand until smooth. Put into fridge for about 1 hour.

2. Meanwhile prepare the filling. In a bowl combine yogurt, cream cheese and sugar. Carefully sift in the cornstarch while mixing.

3. Preheat oven to 350 °F / 180 °C.

4. Prepare a piece of parchment paper on a flat surface and roll out the dough. Transfer the dough to a round tart pan and trim it. Spread the filling inside.

5. Bake for about 45-60 minutes or until center is just set.

6. Allow to cool down completely and put into fridge for at least 2 hours or overnight. Decorate with fruits, if you desire. ENJOY!
