Vegan Grilled Curry-Tofu

Getting ready to fire up for BBQ season? This grilled curry-tofu is marinated with sweet pineapple and curry, served with a green salad, some juicy strawberries and the most deliciously grilled pineapples...extra flavorful and super colorful!







The Recipe

Vegan Grilled Curry-Tofu

Ingredients

16 ounces / 454 g of firm tofu

1 pineapple, peeled and core removed

1 teaspoon ginger, grated

1 teaspoon curry powder

1/2 teaspoon taco spice

dash of chili flakes (optional)

1 tablespoon vegan sour cream

salt

Instructions

1. Add 1/3 of a peeled pineapple to a food processor and mix until smooth. Combine with ginger, curry, taco spice, chili flakes and vegan sour cream.

2. Cut tofu into cubes and add to the marinade. Let sit for about 2 hours or preferably overnight in the fridge. Season with salt.

3. Take skewers and thread the tofu cubes on. Slice remaining pineapple. Grill (or cook in a pan) the skewers and the pineapple slices until lightly charred. Serve with a green salad! ENJOY!
