
Sometimes the week needs a little bit of extra sweetness! These vegan jelly doughnuts are simple but just so good!
It's a simple dough recipe, fried to perfection and then filled with homemade jelly. I'm completely addicted...
The Recipe
Vegan jelly doughnuts (makes about 22 2-inches doughnuts)
Ingredients
For the dough:
3 1/4 cups / 400 g all-purpose flour
1 teaspoon active dry yeast
1/4 cup / 50 g sugar
1/4 cup / 60 g vegan butter
1/2 cup plus 1/3 cup / 200 ml of plant-based milk (I used oat milk)
5 ounces / 150 g jelly
sugar for dusting
vegetable oil for frying
Instructions
1. Combine flour, yeast, sugar, butter and milk and knead until the dough is smooth. The dough will be soft and moist. Line a baking tray with parchment paper. Form little balls (about 2 inches / 5 cm) and let them rest on the baking tray for about 1.5 hours. Cover them with a kitchen towel.
2. In a pot heat vegetable oil until thermometer shows 350 °F / 180 °C. Transfer the doughnuts to the pan and fry them golden brown, 1 to 2 minutes per side.
3. Transfer them to a wire rack and allow them to cool down. Add the sugar to a small bowl. Dip each doughnut into the sugar. Poke a hole into the doughnut. Add the jelly to a pasta bag and fill the doughnut.
