Vegan Salmon and Avocado Sushi

Have you ever made homemade sushi? It is really not that hard and these taste even better than the store-bought rolls! What I love is that Sushi can be filled with any ingredient you choose. So get creative and let's roll some fresh and delicious sushi!










My favorite combination used to be salmon and avocado. So I was looking for something similar and found it! Peeled bell peppers! The peppers are baked until the skin blackens and then the skin comes easily off. And I just LOVE them in combination with the avocado. SO GOOD!









The Recipe

Vegan salmon and avocado sushi (makes 2 rolls)

Ingredients

1 cup / 230 g sushi rice
1 1/2 /360 ml cups water
2 tablespoons rice vinegar
dash of salt

1 bell pepper, peeled and sliced
1 Avocado, sliced
2 nori sheets

Instructions

1. Preheat oven to 410 °F/ 200 °C. Bake bell pepper until skin blackens. About 30 minutes. Allow to cool and peel of the skin.

2. In a pot combine rice and water and bring to boil. Let simmer until rice has soaked all water. Fluff with fork and add rice vinegar and salt. Allow rice to cool.

3. On a flat surface make the sushi. First add the rice to the nori sheets until the sheets are fully covered. Add slices of avocado and peeled bell pepper. Roll tightly and cut into pieces. Enjoy with soy sauce, ginger and wasabi.
