Vegan Cauliflower Alfredo Bake with Spinach

Sharing my No-Guilt recipe for vegan cauliflower Alfredo bake with you today. Couldn't be more excited because it's a healthier take on your regular Alfredo. It's so creamy and delicious and packed with good ingredients.





Butter and Parmesan cheese make a rich and smooth sauce. Cauliflower and spinach add the healthy touch in this FLAVORFUL comforting meal. 





The Recipe

Vegan cauliflower Alfredo bake with spinach

Ingredients

3 heads of cauliflower, chopped

2 tablespoons olive oil

salt and garlic pepper

For the Alfredo sauce:

4 tablespoons light vegan butter

2 garlic cloves, grated

6 tablespoons all-purpose flour

3 cups / 700 ml plant-based milk (I used oat milk)

1/4 cup / 30 g vegan Parmesan cheese, grated

3 tablespoons nutritional yeast

salt to taste

2 ounces / 60 g spinach, chopped

For the topping:

1/4 cup of whole-wheat bread crumbs

more vegan Parmesan cheese to sprinkle on top

Instructions

1. Preheat oven to 400 F° / 200 C°.

2. In a deep baking pan combine chopped cauliflower, olive oil, salt and pepper. Bake for 15 minutes.

3. Meanwhile make the sauce. Melt the butter in a hot pan and add grated garlic and flour. Combine until smooth. Add plant-based milk and mix until smooth. Let cook under low heat for a few minutes until the sauce starts to thicken. Add salt, yeast and Parmesan cheese.

4. Add chopped spinach and Alfredo sauce to the cauliflower and combine. Sprinkle bread crumbs and more Parmesan cheese on top.

5. Bake for another 25-30 minutes or until golden brown.

Serving suggestions: rice or bread
