Vegan plum cake
Ingredients
For the chocolate crust:
180 g / 1 1/2 cups all-purpose flour
40 g / 1/3 cup almond flour
50 g / 1/2 cup powdered sugar
2 tablespoons dark cocoa powder for baking
100 g / 1/4 cup + 3 tablespoons cold vegan butter for baking
For the filling:
200 g / 7 ounces vegan cream cheese
200 g / 7 ounces vegan sour cream
15 g / 2-3 tablespoons cornstarch
100 g vegan white chocolate
20 g / 1/8 cup vanilla sugar
ripe plums, pitted and sliced
For the streusel / crumbs:
60 g / 1/2 cup all-purpose flour
25 g / 1/8 cup sugar
40 g / 3 tablespoons vegan butter
Instructions
1. In a bowl combine all ingredients for the crust and knead until smooth. Put into fridge for at least 1 hour.
2. Preheat oven to 350 °F / 180°C.
3. On a piece of parchment paper roll out the crust and transfer to a tart pan.
4. In a bowl mix all ingredients for the filling until smooth. Put over the crust. Top with sliced plums and streusels.
5. Bake for about 1 hour. Allow to cool completely. Dust with powdered sugar, if desired. ENJOY!
