Vegan Apple Hazelnut Cakes

The Recipe

Vegan apple hazelnut cakes

Ingredients

2 cups / 300 g all-purpose flour

3 teaspoons baking powder

1 teaspoon cinnamon

2/3 cup / 70 g hazelnut flour

1/2 cup / 100 g sugar

1 cup / 250 ml plant-based milk (I used oat milk)

1/3 cup / 75 ml vegetable oil (I used sunflower oil)

3 medium sized apples, peeled and stem removed

1/3 cup / 80 ml apple butter

Instructions

1. Preheat oven to 350 °F / 180 °C.

2. In a bowl combine flour, baking powder, cinnamon, hazelnut flour and sugar. Add plant-based milk, apple butter and oil. Mix with a high-speed mixer until smooth. Add grated apple and combine.

3. Transfer to small cake molds or muffin cups.

4. Bake for about 20-30 minutes, until golden brown and a wooden stick comes out clean.

5. Decorate with powdered sugar, icing or melted vegan chocolate. ENJOY!
