Vegan Buckwheat Pancakes

Sundays call for pancakes! If you like the wholesome nutty flavor of buckwheat, try these healthy buckwheat and oat pancakes. Serve with your favorite yogurt, fruits and syrup and ENJOY!





The Recipe

Vegan Buckwheat Pancakes (yield 6-8 pancakes)

Ingredients

90 g buckwheat flour

25 g oat flour (sub in shredded oats)

1/2 teaspoon baking powder

225 ml plant-based milk (I used oat milk)

vegetable oil for cooking

Instructions

1. Combine all ingredients for the pancakes in a bowl and mix with a mixer on high speed until smooth. 

2. Heat a pan on medium heat. Add a little bit of vegetable oil. Spoon about 2-3 tablespoon batter on the center of the hot pan and form a circle with the spoon. Cook until bubbles appear and gently flip over and cook until golden brown. Repeat with the remaining dough.

3. Serve pancakes with fresh fruits, syrups or vegan yogurt, if desired. ENJOY!
