Vegan Swedish Cardamom Buns

If you never had Swedish cardamom buns before, it is about time! Trust me, you need these in your life. They are fluffy, filled with cardamom and cinnamon and topped with a sugar glaze. Such a comforting and delicious treat. 







The Recipe

Vegan Swedish cardamom buns

Ingredients

For the buns:

1 cup / 250 ml plant-based milk (I used full fat oat milk)

1 teaspoon active-dry yeast

500 g / 4 cups all-purpose flour

3/8 cups / 75 g sugar

dash of salt

1 teaspoon cardamom

2.6 ounces / 75 g vegan butter

For the filling:

3.5 ounces / 100 g vegan butter

1/2 cup / 100 g sugar

2 teaspoons cinnamon

2 teaspoons cardamom

For the sugar glaze:

3/4 cup / 150 g sugar

1/3 cup / 80 ml water

Instructions

1. In a bowl combine warm oat milk, sugar and yeast. Let sit for a bit. Add flour, salt, cardamom and soft vegan butter. Knead until smooth. Let rise for about 1.5 hours. Put into fridge for at least one hour or overnight.

2. Preheat oven to 410 °F/ 210 °C.

3. On a lightly floured work surface roll out dough into a rectangle about 1/4 inch / 0.6 cm thick. In a bowl mix soft vegan butter, sugar, cinnamon and cardamom. Use a knife to spread the spiced butter across the dough.

4. Fold the right third of the dough over in towards the centre, then fold the left third over. Using a sharp knife cut into 12 strips. Take one strip, twist it a few times, then wrap it around 2 fingers and make a knot. Place buns on a baking tray (line with parchment paper). Bake for about 15-20 minutes, until golden brown.

5. Meanwhile make the sugar glaze. In a pot heat sugar and water. Let simmer until sugar is dissolved. Glaze hot buns with the sugar glaze. Allow to cool. ENJOY!
