Vegan Grilled Summer Salad

I'm so not ready to say goodbye to summer yet. Thats why I try to make the most of all the vegetables and fruits that are in season right now. This summer salad is so easy to make, extra colorful, packed with flavor, healthy and beyond delicious. 




The Recipe

Vegan Grilled Summer Salad

Ingredients

4 tablespoons olive oil

2 tablespoons balsamic vinegar

1 eggplant, thinly sliced

2 small zucchinis, thinly sliced

1 small red onion, chopped

1 red bell pepper, chopped

5 sun-dried tomatoes

5 artichoke hearts

2 tablespoons thyme

basil and capers to garnish

salt and pepper to taste

Instructions

1. In a bowl combine sliced eggplants, zucchinis, bell peppers, artichokes and red onions. Add olive oil and thyme.

2. Grill vegetables in a grill pan.

3. Transfer grilled vegetables back to the bowl with the remaining oil. Add balsamic vinegar and sun-dried tomatoes. Season with salt and pepper. Garnish with fresh basil and capers. Serve with bread, if desired. ENJOY!
