Vegan Plum Galette with Hazelnut Crumbs

The Recipe

Vegan plum galette with hazelnut crumbs

Ingredients

For the pastry:

1 cup + 3 tablespoons / 150 g all-purpose flour

1/2 cup + 1 teaspoon / 50 g almond flour

4 tablespoons vegan butter (for baking)

4 tablespoons vegetable shortening

1 teaspoon sugar

3-4 teaspoons ice cold water


1 tablespoon vegetable oil + 1 tablespoon syrup to brush the galette

For the toppings:

6 ripe plums, pitted

2-3 tablespoons sugar (to taste)

For the crumbs:

1 cup / 100 g hazelnut flour

3 tablespoons / 40 g sugar

1/4 cup / 60 g vegan butter

Instructions

1. In a bowl combine flour, almond flour, sugar, vegan butter, vegetable shortening and water. Knead until smooth. Put into fridge for at least 1 hour.

2. Preheat oven to 350 °F / 180 °C.

3. On a lightly floured surface roll out pastry. Combine plums and sugar and place them on top of the pastry. Fold the edges up and over the fruits. In a small bowl mix vegetable oil and syrup. Brush galette with the mixture. In another bowl combine hazelnut flour, sugar and butter and knead by hand. Top the galette with the crumbs and bake for about 35-40 minutes or until golden brown.

4. Serve with your favorite ice cream or top dust with powdered sugar, if desired. Slice and ENJOY!
