Vegan BBQ Tofu with Jollof Rice. Sharing a recipe for this wonderful West African rice dish. The rice is cooked in a flavorful tomato sauce and packed with spices. Best: whole house smells amazing too! Hope you love.

Ingredients

For the Jollof rice:
2 tablespoons oil
2 white onions, minced
2 1/2 cups long grain rice
1 1/2 cups vegetable broth
3/4 cup / 120 g raw almonds
1 can (28 ounces / 794 g) whole-peeled tomatoes
2 teaspoons curry powder
1 garlic clove, minced
2 teaspoons ginger, finely chopped
1 teaspoon dried herbs (such as thyme or oregano)
Instructions
1. In a large pot heat oil and fry onions for about 10 minutes over medium heat. Add tomatoes, curry powder, garlic clove, ginger, dried herbs and cook for about 20 minutes on low heat. With a blender blend sauce until smooth.
2. Add rice and vegetable broth and cook on low to medium heat for about 30 minutes or until rice is soft.
3. Meanwhile heat some water in a pot and cook almonds for a few minutes. Rinse them under cold water and peel skin off.
4. Season rice with salt and chili (optional) and add peeled almonds. Serve with BBQ tofu and ENJOY!
