This is my healthier take on risotto today. Vegan whole grain farro with peas and yummy mint yogurt. Such a delicious combination. Enjoy the weekend!
The Recipe
Vegan whole grain faro with peas and mint yogurt (3-4 servings)
Ingredients
For the farro:
8.8 ounces / 250 g whole grain farro
1 tablespoon vegan butter
1 shallot, finely chopped
1 garlic clove, finely chopped
8.8 ounces / 250 g frozen peas
1/2 cup / 120 ml white wine
1 1/2 cups / 625 ml vegetable broth
1/4 cup / 35 g vegan Parmesan cheese, grated
3 sprigs of fresh mint (just use the leaves)
2 tablespoons vegan butter
For the mint yogurt:
1/2 cup / 120 ml vegan yogurt (such as almond or soy)
1 tablespoon chopped mint
salt to taste
Instructions
1. In a pot heat 1 tablespoon vegan butter and cook chopped onions and garlic for a few minutes on medium heat. Add the farro and cook for another minute, while stirring constantly. Add white wine and cook for a few minutes, then add vegetable broth. Cook until faro is soft.
2. Meanwhile pour hot water over the peas and let sit for a bit. Add them to the faro and mix.
3. In a food processor combine 2 tablespoons of melted vegan butter with the mint leaves. Mix until smooth. Add the mint butter and parmesan cheese to the cooked faro and combine well.
4. For the mint yogurt add yogurt, mint leaves and salt to a food processor and mix until smooth. Serve faro with mint yogurt. ENJOY!
