The Recipe
Vegan marble banana madeleines (makes about 36 small madeleines)
Ingredients
Light batter:
2 over-ripe bananas, mashed
3/8 cups / 75 g sugar
1 1/2 cups / 190 g all-purpose flour
4.5 ounces / 125 g soft vegan butter at room temperature
1 teaspoon baking powder
2/3 cups / 150 ml plant based milk (I used oat milk)
Dark batter:
1/4 cup / 60 ml plant based milk (I used oat milk)
1/4 cup + 1 tablespoon / 30 g dark cocoa powder (for baking)
Instructions
1. Preheat oven to 350 degrees F (180 °C)
2. In a large mixing bowl stir together the mashed bananas, sugar, soft vegan butter and plant-based milk. Add the flour and the baking powder until combined.
3. Scoop half of the light batter into a new mixing bowl and add cocoa powder and the plant-based milk until combined.
4. Pour the light and dark cake batter alternating into the molds of a madeleine pan using a teaspoon.
5. Bake for about 20 minutes, or until center is just set.
6. Let the madeleines cool and remove from pan. Decorate with dark chocolate or dust with powdered sugar, if desired. ENJOY!
