Vegan peanut sticky rice (Xôi lac) with sesame paste
Ingredients
For the rice:
2 cups / 360 g sticky (glutinous) rice
3/4 teaspoon salt
1 teaspoon sugar
1/2 cup / 80 g peanuts, roasted
For the paste:
5 tablespoons peanuts
4 tablespoons sesame seeds
1/2 teaspoon salt
1 teaspoon sugar
Instructions
1. Soak the rice overnight in water. The next day drain the rice and rinse under cold water.
2. Combine rice, salt, sugar and peanuts and mix with a spoon. Cover the rice with a kitchen towel or cheesecloth and put the rice in a steamer. Steam for about 30 minutes or until rice is tender.
3. Meanwhile prepare the paste. Combine sesame seeds, peanuts, salt and sugar and grind with a food processor. Heat a large pan and roast the paste until golden brown. Set aside.
4. Serve sticky rice with the sesame paste. Make small balls and dip them. It's fun! ENJOY!
