The Recipe
Vegan tofu curry with cilantro
Ingredients
For the cilantro chutney:
4 cups / 100 g fresh cilantro
1/2 cup / 70 g peanuts
4 tablespoons lemon juice
1 teaspoon salt
2 tablespoons vegan yogurt (such as almond or coconut)
1/4 teaspoon turmeric powder
1 small chili (optional)
For the tofu:
2 tablespoons vegetable oil
15 ounces / 425 g firm tofu
2 inch / 5 cm piece of ginger, minced
6 garlic cloves, minced
salt to taste
2 tablespoons vegan yogurt or more as needed
1/4 cup / 60 ml vegetable broth
Instructions
1. In a food processor combine cilantro, peanuts, lemon juice, salt, yogurt, turmeric and chili. Mix until smooth.
2. Heat a skillet on medium heat. Add 2 tablespoons of vegetable oil, ginger, garlic and tofu and stir-fry until golden brown. Add cilantro chutney, yogurt and vegetable broth. Let simmer for a few minutes until everything is well combined. Season with salt. Serve with steamed rice and veggies. ENJOY!
