Vegan Hazelnut Waffles with Strawberry Compote

Embracing the long weekend with my family, lots of laughter, fun and of course good food! For breakfast we enjoyed these vegan hazelnut waffles with strawberry compote. Best way to start into the day.







The Recipe

Vegan hazelnut waffles with strawberry compote

Ingredients

For the waffles (yield 10 medium waffles):

3/4 cup / 110 g all-purpose flour

1 cup / 110 g hazelnut flour

1 over-ripe banana, mashed

2 tablespoons syrup or sugar

150 ml plant-based milk

2 tablespoons vegan butter, melted

2 teaspoons baking powder 

For the strawberry compote:

17.6 ounces / 500 g fresh strawberries

1/2 cup / 120 ml apple juice

1 teaspoon cornstarch

1 tablespoon syrup or more to taste

Instructions

1. In a pot combine strawberries, apple juice and syrup. Cook over medium heat for about 10 minutes. Stir occasionally. Sift in cornstarch while stirring constantly to thicken the sauce. Set aside.

2. In a bowl combine flour, hazelnut flour, mashed banana, syrup, milk, vegan butter and baking powder and mix with a hight-speed mixer until smooth.

2. Heat a waffle iron. Lightly grease with vegetable oil. Bake waffles until golden brown. Serve with strawberry compote, fresh strawberries and powdered sugar, if desired. ENJOY!
